Internationally there is increasing demand for both European and Asian specialty mushrooms. In particular: Maitake, a quality edible and medicinal fungi, and Morel, a fungal delicacy which is currently wild harvested. Australia is well placed to enter the market and meet demand due to its proximity to Asian markets, its multi-cultural heritage and export links with USA, Europe and Asia.

In 2010, per capita disappearance (net domestic use) of all vegetables, melons, potatoes, sweet potatoes, pulse crops, and mushrooms rose slightly to 420 pounds. Increased domestic disappearance of fresh-market vegetables and melons, dry edible beans, and sweet potatoes outweighed reduced use of processing vegetables and potatoes. Record high watermelon supply and disappearance led to a 1-percent gain in per capita melon use.

In this paper the vacuum impregnation technique (IV) is applied on edible whole mushroom (Pleurotus ostreatus L.) using a conservant solution (CS) containing ascorbic acid, citric acid, salt, low metoxyl pectin and calcium, to develop a minimally processed product. The response to the impregnation is appraised to determine the composition of CS and to evaluate changes in the physiochemical, microbiological and sensorial characteristics of the impregnated matrix stored at 4ºC in two atmospheres during 12 days packaging.

USDA.pngHarvested area for fall-season potatoes is forecast at 882,300 acres, 4 percent lower than 2009. Given average yields, fall potato production is expected to decline from the 393.5 million hundredweight of a year earlier. Because of tighter world supplies, grower prices are expected to average above year-earlier levels during the 2010/11 marketing year.
